金沙南瓜 Salted duck egg pumpkin

  • 南瓜 1 顆
  • 鹹鴨蛋 3 顆
  • 橄欖油 少許
  • 青蔥 1  支 
  • 黑胡椒 少許
  • 白芝麻 少許
Ingredients
  • 1 kabocha squash
  • 2 tablespoons extra-virgin olive oil
  • freshly ground black pepper
  • Sesame seeds
  • 3 Salted duck Eggs
  • 1 chopped green onion
 
【步驟】
  1. 將南瓜切成約 1.5 吋厚的片狀。
  2. 均勻地刷上少許油,撒上一點黑胡椒調味。
  3. 以 180°C(356°F) 的溫度氣炸約 10 分鐘,直到南瓜表面微微金黃、內裡柔軟,取出備用。
  4. 取一平底鍋,開小火加入少許油,放入 鹹鴨蛋黃,壓碎後炒至香氣四溢、起泡。
  5. 放入氣炸好的南瓜片,翻炒讓每一片都均勻裹上金黃蛋黃醬。
  6. 加入少許黑胡椒與 白芝麻 提香。
  7. 翻拌均勻後盛盤,趁熱享用。
【Instructions】
  1. Slice the pumpkin into 1½-inch pieces.
  2. Lightly coat the slices with oil and season with a dash of black pepper.
  3. Air-fry at 180°C (356°F) for about 10 minutes, until lightly browned and tender. Set aside.
  4. In a pan over low heat, add a bit of oil and the salted duck egg yolks. Mash and stir-fry until fragrant and bubbling.
  5. Add the air-fried pumpkin to the pan, tossing until each piece is evenly coated with the golden yolk.
  6. Sprinkle in a pinch of black pepper and white sesame seeds.
  7. Stir well, plate, and serve hot.
